How We Calculate Your-Lowest-Price - And Why Our Prices Change Weekly

The USDA does not keep category stats for Prime or Wagyu Cattle Sales, only for "Over 80% Choice" Cattle Sales. The Wagyu market (the prices we pay to our family ranches) will usually follow this category, although the prices for Wagyu cattle will be significantly higher than those for Over 80% Choice. Our prices are subject to change weekly. See chart to the left for window into how we think.
